Trypsin can selectively hydrolyze the protein chain composed of the
carboxyl group of lysine or arginine, which can digest and denature
the protein. The Alpha-1 anti-trypsin, also known as protease
inhibitors, can effectively inhibit the trypsin activity, prevents
the sticky protein from being decomposed by trypsin during cell
growth and thus prevent digestion.
